Winemaking: The ripening period for Chardonnay in the Cowra Region was optimal during the 2017 vintage. The distinct flavours from crunchy pear and white peach were evident in the vineyard. The fruit for this wine was harvested at 13 Be to obtain the white peach and stone fruit characters, whilst still expressing some zippy acidity. Yeast was selected for its aroma production and ferment was held at a cool temperature for a period of three weeks.
