WINEMAKING: The Sauvignon Blanc parcels were harvested when the fruit displayed 3 distinct flavour spectrums. The wine was fermented in three separate parcels with an early, mid and late pick. One of the parcels was wild fermented while the remaining 2 portions were seeded with yeast that we know produces excellent aromatics from our region. Our goal is to capture the excellent characteristics of this variety when fresh and lively.
TASTING NOTES: The Natural Wine Co Sauvignon Blanc is an aromatic wine with prominent tropical fruit characters including passionfruit, melon, pineapple and grapefruit. The flavors are well balanced with mid palate fruit weight combining with a fresh lively finish. Perfect for a relaxing drink after work or with friends on a sunny afternoon.
