The Shiraz was crushed and de-stemmed prior to being transferred to small stainless open fermenters; the addition of preservatives was avoided at this stage. The must was inoculated with natural yeast from a working ferment .The fermentation temperature was held at 23 degrees C.
The cap was plunged by hand three times a day, with the wine pressed off the skins at dryness. Due to the fruit freshness and brightness a decision was to use a moderate amount of both French and American oak. The use of any preservatives or animal based products was avoided during the production of this wine, with the intention being, bottling the most natural product possible.
Ripe plum in colour this Shiraz has aromas of raspberry, cherry and tobacco complimented with some nuttiness. These flavours follow onto the palate in an enticing way and are well balance by silky tannins and vanilla spiced oak. Being medium bodied this wine can be enjoyed upon release, or benefit from short term cellaring.

"Stewed blackberries (not sweet or jammy in any way), a juicy plummy character fills out the palate easily and that aniseed note on the nose appears in the flavours also but only like a ‘high-five and low-five’ is exchanged as they cross paths. Lush and smooth on the finish with little tannin influence, this is a very easy drinking bargain shiraz."
WINE OF THE WEEK: Let’s listen to Jason O’Dea regarding this excellent full-flavoured dry red: “The 2018 vintage was warmer than average in our region with mostly dry days leading into harvest. Conditions for flowering were ideal and we experienced an excellent fruit set. The ripening period was ideal, with some rain prior to harvest. The shiraz’s varietal dark berry fruit flavours became evident at 13.5 baumé and increased in intensity until harvest at 14.5 baumé.” Well made and well said."

89 Points. "Beautiful bright purple in the glass, aromas of tilled black earth, licorice and canned plum are revealed. A few more swirls and mulberry compote steps into the frame. Quite smooth with an easy going presence in the mouth and soft dusty tannins to close. Thumbs up. Drink now to three years."

88 Points. "Fresh, raw, touch of blood and bone. There's fruit at the periphery, Mulberry and blackcurrant. There's violets, with spice - it's savoury, yeasty. Soft, plush, touch of iodine. It's an easy going 'soif' style red. Product of its youth and vintage, tannin is barely a thought - a minor rasp at best. Faint edge of anise, licorice, gentley ebbing to a finish."
